What is a Wicking Bed

EGGPLANT are great with big bold flavours so add lots of garlic and tomato and create this delicious EGGPLANT BAKE
2 Large eggplants
1 red onion (diced finely)
6 cloves garlic (crushed)
2 tbsp tomato paste
2 x 400 grm tinned tomatoes
Cut the eggplants into 7mm slices and salt.
Meanwhile prepare the tomato sauce, sweat off the onions on a medium heat until soft, add garlic and tomato paste and cook for 2 minutes, add tinned tomatoes and simmer sauce for at least 30 minutes (the longer you simmer the bigger the flavour)
Back to the eggplants, wipe off any excess moisture from slices.  Grill eggplant with olive oil until slightly golden.
Layer sauce and eggplants alternatively in a baking tray and bake for 45 minutes at 180.
For a richer version add slices of buffalo mozzarella and torn fresh basil.
TIP - don't skip on the garlic you won't regret it, serve as a side dish with Fish or chicken or with as side dish on toasted sourdough, delicious!
